Spaghetti with bottarga
Ingredients
240 gr. spaghetti
2 cloves of garlic
chilli to taste
200 gr. cherry tomatoes
6 spoons of olive oil
fresh parsley
Introduction
Bottarga are the cured eggs of the mullet. A delicacy of Sardinia. It has a strong sea taste, similar to sea urchin, a very fresh taste. And this is the fascinating part, it isn't fresh, it's cured!
Chop the garlic and gently sauté with the chilli. Add the cherry tomato cut in half and let it cook for about 4 minutes. Drain the spaghetti and add them to the pan with some chopped parsley. Turn the gas off, add some grated bottarga and turn. Put onto the dish and sprinkle more bottarga on top.
