Penne with broccoli and gorgonzola cheese
Ingredients
250g penne pasta (or similar)
!/2 large broccoli or 1 small
1 small leek cut into rings
100 gr Gorgonzola cheese
A generous tablespoon or two of mascarpone
Two handfuls of grated Parmesan
black pepper
1 tablespoon extra virgin olive oil
salt
Introduction
Winter and the broccoli are back…..too heathy! Lets add some gorgonzola cheese!!!
Separate flowers from the stem and boil along with the pasta. Once cooked (3-5 min) put them aside. Sauté the leeks until soft, add half of the broccoli, gorgonzola, mascarpone, a few tablespoons of the cooking water and blend it. Check the seasoning! Drain the pasta and mix it with the blended sauce back in the pan. Add the rest of the broccoli, some parmesan and some grounded black pepper. Serve ….! This is really easy.
